Broccoli-Celery Soup

  • 1 tablespoon butter
  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, chopped
  • 1 teaspoon fresh thyme, chopped
  • 8 cups broccoli, chopped
  • 2 cups water
  • 4 cups chicken broth
  • ½ cup half-and-half
  • salt and pepper, to taste

  • 2 lbs. boneless skinless chicken breasts

  • 1 teaspoon dried rosemary
  • 5 cloves garlic, minced
  • 1 bay leaf
  • 6 cups chicken broth
  • 6 cups water
  • 3 cups pasta spirals
  • salt and pepper, to taste

Combine chicken, onion, carrots, celery, oregano, garlic, bay leaf, rosemary, salt and pepper, all in a slow cooker.   • 2 leeks (white part only), sliced

  • 1 medium onion chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ teaspoon nutmeg
  • ½ teaspoon curry
  • 2 tablespoon olive oil
  • salt and pepper, to taste
